Grate or shred onion, peel the garlic and cut small.
In a pan put a splash of oil, add the onion, garlic and simmer make good sofrito.
A half done, add tomatoes and continue to simmer until desired texture.
Add the pepper, a little salt, ginger and herbs.
Pour the meat, and pass through the sauce, stirring occasionally for about 10 minutes.
Add a good amount of broth to cover the meat. Cook over medium heat until the meat begins to soften.
Incorporate the mushrooms and potatoes (breaking them so that they release all their starch) and simmer until the meat is cooked.
