Extremadura style Lamb Casserole


Flour, salting, starving and browning the lamb. Remove it. In the same oil, put the onion (grated) and 3 cloves of garlic. Then we add the tomato, the spicy red pepper and also the spices. Let it cook with low heat and let it remain a little sweet honey.

Add the lamb meat and the white wine. Then add the broth enough to almost cover the lamb. Let it cook slowly for a long time (I do not want to say how much, this depends on the fires, look from time to time).

When you see that the meat begins to be soft add a chop made with 1 garlic, 4 almonds, parsley and a slice of fried bread or a maria biscuit.

Serve warm on the table and a good drink of red wine.
