Rabbit with Garlic

Cut the rabbit into regular pieces, season to taste.

We separate the garlic, remove 3 for the "picada". The rest with a flat knife, give them a knock. We put them in a pan fry, with skin included. Take them out and reserve.

With the same oil in a pan, roast the rabbit will until well browned.

Besides, while the rabbit is cooked, we make the "Picada" with the ingredients indicated in the recipe.

Add the fried roast cloves of garlic, rosemary, white wine and chilli. We will cover the pan and simmer, we will bake 45 to 50 minutes until it is soft. If as it cooks see little juice we left add a little water.

Ten minutes before removing from heat add the "Picada". It will you leave settle for 5 minutes and serve.

To make the "Picada"

We will put in a mortar the ingredients listed in the recipe and crushed all, adding a little juice from the pan, until a fairly thick sauce.
