Soak for a couple of hours the sweetbreads with water and vinegar.
We take them out and dry them with kitchen paper. If they have a little skin stuck, you have to remove it and chop the sweetbreads if they are too big. Salt and start.
In a frying pan with not too much oil, cook until golden brown. Then add over the sauce that we have prepared.
SAUCE: Blend in blender the garlic, some parsley, oil and glass of brandy.
Besides we will have fried diced potatoes, golden brown.
Add the potatoes and leave to simmer until the juice is reduced enough.
