Cook the macaroni and drain.
Blanch the black sausage and smash it.
In a pan, make the béchamel and mix the sausage sauce. Also grated Parmesan cheese.
Once the sauce is cooked, toss it over the macaroni. Mix well and place everything on a baking sheet. Cover with Emmental grated cheese. Put a few pieces of butter on top and bake, (Gratin).
When serving, once plated, put a good piece of burrata in the middle.
They were very good.
