Clean the pineapple and make it into triangular pieces. Put in a tray and pour sugar on top. Leave in the refrigerator for a couple of hours.
When serving, distribute it in individual dishes. Throw brandy, which will have warmed up a little previously, above the pineapple. Turn on the brandy and go throwing over the pineapple the juice flambé until the flame ends. Be careful not to burn, take a large spoon.
Do not be afraid, the alcohol of brandy once burned, disappears.
